A small contribution, as far as I know, being a native Argentinean, a linguist and translator myself, gaucha means "very helpful", not astuta, astute, keen.
Capurro is a family name, never heard the word being used as fulano, So and So.
By the way, fulano means "John Doe" or anyone unknown.
I agree with: atorranta is not prostitute, rather a girl very easy to have sex with, without paying money
